Turkey Meatloaf

I love meatloaf. This is a recipe that I made up as a healthy alternative to traditional beef meatloaf.  It is full of veggies, low cal, and oh so yummy.

First, set the oven to 375  degrees.

Here are the ingredients that you will need:

Start with 1 pound thawed turkey burger.

Add 2 cups shredded yellow squash and zucchini.

1 cup coarsely chopped mushrooms.

1/2 cup each of julienne cut sun-dried tomatoes, coarsely chopped black olives, and chopped walnuts.

2 cups fresh spinach.

Instead of the standard saltine crackers that usually go in meatloaf, I like to use Wasa crackers.

Five Wasa crackers to be exact, and two eggs (you can just use egg whites, but you'll probably want to uses three eggs instead of two).

The spices:
1 tsp. Salt
1 tsp. Pepper
1 1/2 tsp. Italian Seasoning
1 tsp. Sage
1 tsp. Onion Powder

Put all ingredients into the bowl with the thawed turkey burger.  Make sure the Wasa crackers are crushed, and the garlic is pressed.

Add:
1 T Ketchup
1 T Mustard
1/2 T Worcestershire Sauce

Mix ingredients by hand and add them to a baking dish.

Bake for one hour.

Serve with a side dish such as quinoa pilaf (recipe coming soon) and ENJOY!

Nice pictures looks very professional. I prefer regular meatloaf...looks a bit to healthy for me.
